Buyers should be allowed to pick the courier they want
So NZ Post / Courierpost are the only courier I know of that have their own predefined collection points (such as shops) that you can have stuff sent to. Every other courier you have to give an address that is either a business you have some arrangement you have made yourself, or maybe your home address.
But we can't choose NZP/CP as it is the sellers choice of which courier they want to use to send stuff out and seeing as Aramex is there in the list they will choose that because it must be a little bit cheaper than some of the others. Except that I have read many negative reviews of Aramex and a whole lot more besides. Similarly for Castle Parcels and maybe others. It seems like all the good courier companies like NZ Couriers have been taken over by all these cowboys.
I had a conversation with a computer parts retailer where I told them straight the reason I no longer bought stuff off them was because they drop ship all their stuff, everyone is doing this to save money but the end user is at the mercy of whichever courier the seller decides to use, it's easier to deal with a shop like pbtech where they just transfer the stuff for you to the nearest branch then you can go pick it up instead of having to deal with non existent customer service from some of these couriers.
So TM should let us choose which courier we want to have shipped by,

Different sellers use different couriers for many reasons. I use at least 4 different ones. Depends on the item, where it is going, the time of the day purchased. Some of my items are outside the dimensions that NZPost will take, but Aramex can. NZPost does their collection at 10am here so I will sometimes use a different courier that has an afternoon pick-up for urgent items if purchased after that. Items to business addresses I will sometimes use posthaste or NZ couriers. Larger items need to go via mainfreight. etc etc etc
It's just impossible (for me anyway) for a buyer to demand one courier is used over another.
What WOULD help would be Trade Me making it clearer to the buyer which courier is likely being used for each item. As a seller we have to select the courier when making our shipping templates, but this is not shown to the buyer.

Given you have a strong preference simply ask the seller which courier they use, or if they can use Courier Post. If they don't reply or can't use Courier Post, then find another seller.
Not the end of the world.
Of course, if they say they do, and then they don't, that would earn them a blue from me at best.

Indeed as James has suggest you could use the Q&A feature to ask the seller - Something like "Hi there, sorry to trouble you, but I was wondering if you would use XXXX courier company if I happened to win this auction, I am happy to pay any extra cost that this may incur "
Nothing ventured, nothing gained, the seller may just say "no" which is fine, just move on to the next auction.
But they may also say YES!
I would also advise you though if they do say yes, please place a bid straight away, Some sellers find it very (VERY) frustrating when some one asks a question like this, that potentially puts them to trouble. The Seller agrees and they don't even get a bid from the person asking the question, even if you just move the auction along by $5, it justifies the response on the sellers part.

Thank you Callum for providing an understanding of your shipping choice of use - explanations with this detail are so helpful - I have been stuck on wondering why when I suggested to someone they could ask the Seller if they could request their preferred shipping courier as both couriers were available through BAC this didn't have the same response as your Commenters here. To read your Comment in providing the insight you have gives that awareness which is most valuable when dealing with people from all walks of life - Cheers 😊

Yes Julie. ever courier is usless in some peoples eyes but same couriers are brilliant in others eyes. And all courier companies have bad feedback ratings so perhaps we should just abandon couriers and use pigeon post :)

Yes Callum has put a lot of info in that post which is great. Another thing he has not mentioned is there can be large differences in price between couriers. If buyers are to ask for a specific courier, are they prepared to pay the extra courier charge

Kia Ora Donal,
Thank you for your question - the short answer is Yes!
If a person is requesting a different courier this would indicate they have done their homework and are aware of the different charges involved here - many comments I have seen here are the person stating they are willing to pay extra - Cheers.
