When I get to the payment page for a new listing these are the details about Ping, but I can't remove them to tick th PING box.
Ping is now required for all Marketplace listings to ensure swift and secure payments.A 2.19% transaction fee applies. You can still offer cash or Afterpay, but bank transfer is no longer available.

Ping can't be removed or added. It's pre-ticked by default. So you don't need to try and add it yourself.
Perhaps you could add a screenshot of where the issue is if you can't proceed with your listing?

Well Trade Me need to remove default so we can "choose" to either Opt in or Opt out or other.
There's a multitude of laws internationally for all to comply with for International e-commerce.

AJ Community SuperuserNo they don't. Its their website, they can opt for whatever they choose - so long as its legal. You can then choose whether you want to use their service.
