Hello Hannah. I would send a final email requesting a confirmed pick-up date and time. Put a time limit on is so if they haven't replied to confirm a date/time in 48hrs you will cancel the trade and relist the item. You can also request your success fees back as this will generate an email to the buyer reminding them of their obligations to complete the trade.
Another option is to request that the buyer makes payment before collection. Then you leave the item out so they can collect whenever they want. Obviously that doesn't work for all items if they can't be left outside. But it gives some buyers the hurry up if they realise the item they purchased will be left outside.

Sorry to read you've been left in Limbo' there,
Just adding to Callum's advice, placing feedback often gets a result - simply stating Awaiting Buyer to Pick up - Dates/Times provided on purchase. - Feedback can be changed at anytime though it can only be changed the once.
As this has been more than a week, your Buyer hasn't paid for the item and there are hints of repetitive behavior it's not worth your time in dragging the pick up out further. - A final email with a solid pick up by timeframe or the Trade will be cancelled - if Feedback & your final email go unanswered file for your Success Fee so you can Relist the item - If this should happen you may like to Blacklist this Member which prevents them from Bidding/Buying and asking questions on your Listings coming forward.
With Pick up items it pays to note in the Listing description Pick up terms within XXXX (3, 5, 10 ...) day's or the Trade will be cancelled & Item Relisted unless otherwise negotiated, can help prevent said delays.
I wouldn't leave a parcel outside, unless known timing of an attending Pick up has been arranged, Sellers are responsible for items until they have been delivered to the Buyer, whether by a carrying company or person to person, therefore the risk of a stolen parcel would fall on you here.

I have emailed the buyer giving them till the end of week with a time and havent heard anything yet

Give it time, the expected would be within 24 - 48hrs as not everyone is attached to a device 24/7 & life does get in the way of TradeMe at times. You've made a good start towards finalising the Trade as your email notification forms part of the overall contract.😊
